The only problem is that Google's version of random is rather odd. I have created an album called Google Nest Hub with over 400 amateur artworks all designated as favourites (until I decide to un-favourite any of them and be replaced) which are randomly displayed. Click on that and the icon then turns white and the photo will then form part of your favourite selection to be displayed. To do this, click on the image and it is displayed with a row of icons top right including a star representing Favourite.
You not only have to create a separate album within Google Photos for the pictures you want to display on your hub but within that album you should designate the images you want to have appear on your hub as Favourites.
